

Ingredients (For 1 pancake)
- One portion of boxed stuffing mixture
- 2tbsp Melted butter
- 2 Medium eggs
- 1 Spring onion/Scallion/Green onion (chopped)
- Pepper
Potential additional ingredients:
- Grated mozzarella cheese to add into the pancake
- Sliced avocado
- White meat protein such as chicken or turkey (a good way to use up some holiday leftovers)
- Gently smoked ham
Method

- Mix one portion of boxed stuffing mix with melted butter and one of the eggs
- Put it into a skillet on a medium heat, allowing to cook and brown up on the bottom side
- Whilst this is cooking, it will take about five minutes before it needs flipping over, heat some oil/butter of your choice in a skillet for your eggs
- Flip your pancake over. I used a small egg spatula to do this and did it over the other skillet, just in case the structural integrity wasn’t there, but the egg really helped bind the mixture together so it was all okay. Turn the heat to a medium high
- Start frying your egg to your yolk level of cooked preference. Add any seasoning you might want such as a grind of pepper, chili flakes or smoked paprika
- Put your egg onto some kitchen paper to remove any excess oil before serving on top of the pancake and serving with the spring onions
Eating And Storage Tips
This is very much a basic version of this recipe and you can adapt it to have a variety of other options. If you go to add cheese into the pancake mixture aim for a low moisture cheese such as mozzarella and no more than a quarter cup or it might make it hard to keep bound together.
To make the dish go from being either a lunch time meal or a Christmas dinner starter to more of a fully rounded dinner dish you could add some slices of smoked ham or chicken/turkey to it. You could ditch the egg completely here and put it with something like a cranberry sauce and/or gravy.
You could get away with making the pancakes up a few hours in advance, placing in a Tupperware and setting aside and then refrying them to ensure they are piping hot before serving. Keep an egg on them though so they don’t go from browned to burnt!
If you are thinking you might want this with some slices of avocado I would highly suggest putting some red chili flakes with it and perhaps doing a poached egg instead of a fried egg, though a fried egg would still work well, the added amount of silky sauce created from the poached egg would really work well here.
