BBQ Chicken Tortilla Pizzas

Ingredients (For 2 Tortillas)

  • 2 Medium flour based tortillas
  • 1/4 Cup BBQ sauce
  • Pre-cooked shredded chicken equal to 1/2 breast (I used leftovers from a whole cooked chicken)
  • 1/4 Cup cheese (I needed to use up some deli-style cheese slices here so just cut them up but shredded cheese and usually a white cheese works much better)
  • Pepper and any additional seasonings you might want (basil or oregano would work well, though this depends on any previous seasoning applied to the chicken or what BBQ sauce style you have opted for)

  1. Preheat oven to 400°F/200°C. Line a baking sheet with foil
  2. Place tortillas on the baking sheet and avoid overlapping as much as possible
  3. Spread BBQ sauce over them
  4. Add chicken and seasoning(s)
  5. Distribute cheese on top
  6. Cook for approximately 15 minutes
  7. Serve

Eating And Storage Tips

If you want to make these into being easier to pick up and eat style, only cover half the tortilla and fold it over before cooking. The tortilla will be too crunchy to do this easily and evenly afterwards.

You could easily let these cool, slice them up and pop them into a lunchbox but depending on the cheese you used they might not be the greatest thing in the world. I would strongly suggest you just make as much as you need and eating them straight out the oven instead.

If you are really keen to make these in advance drop the oven temperature to 380°F/190°C and cook for a little longer. This will help stop the base becoming overcooked but help allow for the cheese to be more on the cooked side than a melty ‘goop’ and provide more stability when cooled.

You could of course just not cook them at all and instead roll them up into a traditional style wrap! If you are going to do this though then think about what seasoning you are going to use, especially any dried herbs, or they could very quickly overwhelm your flavor profile.
