Ingredients (For Four)

  • 1.5lb Pork (I used tenderloin cut into fine strips)
  • 1/2 Drained tin of pitted black olives (sliced)
  • Restaurant style tortilla chips
  • 3 Cloves of garlic
  • 2tbsp Lemon juice
  • Taco seasoning packet (with matching water amount required)
  • 1tbsp Onion powder, 1/2tbsp black pepper, 1tsp Cayenne pepper, 1/2tbsp Garlic powder, 2tbsp Dried parsley flakes
  • 1 Cup Monterey Jack cheese grated
  • 0.25 Cup Mozzarella cheese grated OR 1 String cheese pulled apart
  • Optional: Sour cream, guacamole, salad to serve
  • Optional: You could add other things directly into the nachos too; Corn, small tomatoes, finely chopped onion etc
  • Tip: If you have leftover pork, especially pulled pork, this recipe would be a great way to use it up

Method

  1. Preheat oven to 400°F/200°C
  2. Put garlic with lemon juice into a skillet on a medium heat
  3. Add onion powder etc and use a spactula to mix around
  4. Add pork and ensure it is coated in the garlic and seasonings continuing to cook on a medium heat (given how finely the pork is chopped this only takes a few minutes to cook)
  5. Mix through the black olives
  6. Add the taco seasoning power dry and coat the pork before adding the water required and keeping on a medium heat (I try to avoid it getting to the ‘bubbly’ stage). Let it reduce down for about five minutes
  7. Place chips into an oven safe dish or tray, layer pork mixture on top followed by the cheese. Give the top a few good grinds of pepper and put into the oven
  8. Cook for about ten minutes before serving

Eating And Storage Tips

Personally I find this best served immediately when everything is still warm and the cheese is a little gooey but not too stringy because of using such a small amount of mozzarella.

You can though leave it in the oven (turned off) to stay warm and slowly cool down. Remember though that doing this will continue to cook the cheese.

Cover any leftovers with foil or wrap and put into the fridge. Aim to eat them the next day or the day after at the latest. I find the leftovers best served cold but if you want to reheat them try find the time to do it in a low temperature oven, add a little more cheese and keep a careful eye on the chips or they get the bad chewy really quickly.
