
Ingredients (For Four)
- 1lb Chicken cubes about an inch in size (Chicken breast works best but you could change the recipe to be chicken thighs, this might alter the cooking time needed though and for a crispy skin you might want to fry them a little first)
- 1/2 Cup BBQ sauce (Just an original one. A smoked one will overpower and a sweet/honey one is likely to make it too sweet)
- 1/2 Cup Orange marmalade (Finely chopped bits if possible so they break down more during cooking)
- 3tbsp Low-sodium soy sauce
- 1tbsp Finely chopped garlic
- Salt and pepper
- Optional: Rice and/or vegetables for serving on the side
- Optional: A sprinkling of sesame seeds on top would work well for added crunch
Method
- Put your slow cooker on to heat up on the low setting for a five hour cook or a high setting for a three hour cook
- Place your BBQ sauce, marmalade, soy sauce, garlic and seasoning into the slow cooker pot and give it a good mix around
- Add in the chicken, stir to ensure it is all fully coated with sauce
- Walk away. Maybe check on it around half way through cooking if on a high setting to ensure the sauce isn’t burning/sticking to the pot
- Serve with any sides you want. This is a recipe I would suggested immediately turning the pot off for rather than leaving on a warm setting or the chicken is likely to over cook and go dry
Eating And Storage Tips
After you have eaten your delicious simple orange chicken meal, if there is any left, move it to a storage container to help it cool quicker and then place in the fridge. It should be good for a couple of days.
Be sure to reheat it so it’s hot all the way through but given the sugar content of the sauce do this in shorter bursts and sure to give it a little stir to stop the sauce from burning or boiling into a goopy mess!
Would work well cold in a wrap with a side salad for lunch just be sure to not overload with too much sauce (perhaps drizzle some extra sauce on your salad instead).
