Basic Beef Burgers

Ingredients (For Four Burgers)

  • 1lb Ground beef
  • One medium/large egg
  • 2tbsp Worcestershire sauce
  • 1tbsp Finely chopped garlic
  • 1tbsp Garlic granules
  • 1tbsp Onion powder
  • 2tbsp Dried chives
  • 2tbsp Dried parsley
  • 1tsp Cayenne pepper
  • Black pepper to taste
  • Dash of oil for frying
  • Optional: Cheese slices (I did a smoked provolone but choose your own)
  • Optional: Condiments and toppings (I did ketchup and pickles with a separate side salad and homemade oven fries)
  • Burger buns

Method

  1. In a bowl lightly beat the egg, chopped garlic and Worcestershire sauce together
  2. Add the ground beef and mix it together well. It might seem mildly ‘squidgy’ at this point but that is okay!
  3. Add the seasonings and quickly mix together. At this stage make sure to not overwork the mixture
  4. Cover the bowl and place in the fridge for at least an hour (as long as your meat and eggs are fresh enough you can keep it at this stage for up to 24 hours). This helps to bind the ingredients together and will help for forming the burgers later on. If you’re making your own homemade oven fries, condiments or needing to do any other side dish prep now is the perfect time to focus on that so you’re not needing three hands later on
  5. Put a light layer of oil into a skillet and heat it on a medium high setting
  6. Take the mixture from the fridge, divide into four portions and form into patties and place in the heated oil (careful, even with just a dash of oil because of the fats and liquid in the burger it might cause some splashing)
  7. Cook it for about three minutes on each side. Try to only flip them once to help them stay intact. This cooking time will put them on about a medium-rare. For medium add about another 30 seconds a side, medium-well about a minute etc. If you want the cheese melted onto the burger, drop the skillet heat and add it now before removing the skillet completely from the heat
  8. Depending on the fat percent of the meat you used and the oil you might want to rest the burgers on some kitchen paper to help remove excess grease feels
  9. Serve in buns to match your preference

Eating And Storage Tips

Cooking them on a medium high setting and with the Worcestershire sauce should have kept the burgers to be fairly juicy so you might want to cut the burger in half or have a napkin close to hand.

You can make the uncooked mixture up 24 hours before you need it providing your ingredients are fresh enough. After cooking allow to cool, Tupperware/securely seal and place in the refrigerator before eating within two days.

For reheating make sure it’s hot all the way through, I’d usually do this in a microwave and wrap them in a damp kitchen towel for a couple of minutes as it stops it from drying out and unlike putting them back into a skillet to heat up helps to stop over-browning or hardening the outside of the burger.
