
Ingredients
- 3 ripe (darkened skin, a bit squishy, beyond the ‘just eat me’ stage) mashed medium to large bananas
- 1 peeled, cored and cubed apple
- 2 cups of all-purpose flour plus 3 additional tablespoons
- 3/4 cup of sugar (either white granulated or a regular brown sugar works just fine but other types will as well)
- 1 flat teaspoon of baking powder
- 2 teaspoons of ground cinnamon
- 1 teaspoon of ground ginger
- 1/2 teaspoon of finely ground salt (just your regular table salt works best)
- 1/4 milk (you can use a dairy-free milk or buttermilk etc but I just use regular 2%)
- 3 large eggs
- 6 tablespoons of melted and cooled unsalted butter
- 2 tablespoons of vanilla extract (less if you have a ‘fancy’ or more ‘proper’ version)
Method
- Preheat oven to 350F/180C and line an approximately nine inch loaf tin with parchment paper (or use butter/oil to ensure it becomes/stays non-stick!)
- In one bowl mix the apple and additional tablespoons of flour together (this will ensure the cubes do not all sink to the bottom of the mixture during baking)
- In another bowl combine all the wet ingredients (vanilla extract, butter, eggs, milk and mashed banana)
- Add the ground cinnamon, ground ginger, salt and baking powder
- Add the sugar and be sure to give it a quick whisk through
- Fold in the flour and ensure it is a thick but runny mixture
- Fold in the apple ensuring they keep some of the flour coating
- Transfer into the loaf tin and bake for approximately 50-60 minutes (I usually check at 45 minutes for a knife to come out clean and then in 5 minute increments after that)
- Give it about 10 minutes to settle and cool a little in the tin before removing to a cooling rack (I usually pull down the parchment paper from the edges but keep it on underneath at this stage to ensure it doesn’t get ‘stuck’ to the cooling rack)
Eating And Storage Tips
I pre-slice mine before storing in Tupperware (I don’t put it in the fridge). It usually lasts four to five days. If you want it warm reheat slices in the microwave for 30-45 seconds. You can either eat it plain, with some butter or something more ‘elaborate’ like PB+J.
